Notes

Eleanor Hitchings (1917-1999) worked for the Saskatoon Construction Association for 25 years, rising to the position of Executive Director. In 1967 she compiled this cookbook to raise money to travel from Saskatoon to Expo ’67 in Montreal. While the first printing ran 250 copies, Hitchings went on to sell more than 5000 copies of her cookbook (to individual buyers as well as to Eatons, The Bay, the Co-Op, and local Saskatoon stores). Intended to celebrate Canada’s history and geographic diversity, the cookbook includes contemporary and historical baking recipes from across the country. From Pumpkin Pie to Tomato Soup Cake (“try it, it’s good!”), the volume preserves recipes and baking hints from the early/mid-1900s.
